My uncle (My mother's brother) is works at a Govt Sector in Dubai, UAE. I want to know, is he able to sponsor me a residency visa, and also he has met all salary requirements for sponsorship as per UAE immigration & labor law.

I am not sure. But the visa sponsor has to be direct relative or employer.
Uncle is not direct relative. But again I am nor sure about this.
