I'd take a Landcruiser (or Patrol) and head of into a desert in one of the emirates. Don't wanter too far off though. Al Ain is also photographer friendly, you just need to stray away from the populated areas.

Madinat Jumeirah is a gorgeous location, if you around sunset you can get amazing shots of the beach and the buildings. My brother went to Bastakiya in Bur Dubai, unlike any place I've been to in Dubai-amazing venue for photographers
