Alright people, got two New Zealand silversides sitting on my counter at the moment. I'm gonna try to pan sear/roast/cook or whatever the fek it is you do with them. Simply because I don't have a BBQ and couldn't be arsed about the oven. I looked up a few videos on youtube from greats like Gordon Ramsey etc etc on how to do them.

I've tried this a couple of times before and the first time it was OK ish a bit dry, 2nd time was not bad. Maybe third time is the charm Problem is I like my stuff well done and this sorts of dries it out. So any great ideas on how to get a good well done steak from a pan.

So any tips or clues before they jump into the pan ? You've only got time until me mashed potatoes are done, then the buggers are going in, so they haven't got much time before I massacre them.

The slower you cook them the drier they will end up, so make sure your pan is hot before you sear the steaks and do them as fast as you can, take them off the heat when they are still red in the middle let them rest in a warm oven for 10 mins to finish, go to Geant tomorrow morning and invest in a BBQ and some charcoal, you won't regret it.

Not a fan of just steak with no spices ,

I'd rather cut them into pieces and get someone who knows how to cook "Nihari" , in the event if I couldnt find anybody , I'd make it myself using the Shan Nihari Masala -> http://goo.gl/KO3G1 , And them make some nice raita <- http://goo.gl/gWPtK , And finally get some fresh Tamis -> http://goo.gl/Sjrqw , Voila fit for an emperor ,

Ironically I was Master chef Australia yesterday and saw the oven thing and thought....hmmm intresting but like I said couldn't be arsed with the oven. Oh and too fekin hot already to be feking around with a BBQ and coals.

One BTW one of my steaks turned out real awesome, nice and juicy, other one was OK, still tasted good though. Finised off with slight garlicy sauce and creamy smooth mashed potatoes.

Considering this was only my third go at messing about with steaks it was pretty good, plus I think I'm getting better at it as I go along 8)

4th time is the charm eh :D

DDS, were your steaks frozen? Never buy frozen meat if you can help it, although I realise that could be difficult over here.
British beef is best, followed by Irish and the South African, I reckon. If you don't want to buy fillet, try rib eye.
I don't like Gordon Ramsey, he's over rated. What man uses botox? He's a fanny!
If you want to check out a real man/chef look at James Martin, now he's a real man and doesn't swear like that tart Ramsey.
James Martin is a good northern lad and uses a lot of butter and cream in his recipes. I watched him cook a steak live, last week. He had the pan red hot before he started, put loads of butter on it, seared it on both sides but more butter on it and put the pan in the oven for 10 minutes to finish it off. He then let it stand after putting more butter on it.
It looked delicious!

Haven't seen "British" beef here. Top of my list would be Irish beef. Don't recall seeing any South Africa beef here as well. Mostly Austrailian beef in the markets and I found it to be hit and miss. The only time I use local beef is when I cook something that requires me to boil the meat for 2 hours to get it tender!!!!

DDS, head over the Lulu in Al Barsha for the best price on Irish beef. You can even ask the butcher to cut you a thicker slice. I like my "man steaks". :lol: Better than 9 dhs per kilo less than Spinneys and still cheaper than most other markets.

The Butchers Shop restaurants uses SA beef and I'm sure I saw them advertising it for sale at their restaurant on the Walk.
If you look at their menus, they tell you all about the cuts, the way they cook it and the sauces they use. Interesting if you like beef.

I'm still hung up on USA beef!!!! A matter of taste I suppose.

I get my stuff from geant simply because its closer to home, sometimes they have some decent cuts sometimes they don't. I stay away from stuff from the UK with all the mad cow shite, already loony enough to be risking that ! Everything else is game.

Unlike you BB's I really don't like shopping, big surprise there, eh. So I get everything from under one roof, what ever they might have on offer. Couldn't be bothered to scoot around town to pick up various bits and bobs.

Only thing I would bother with is veggies and fruits. Its just amazing the price difference and quality of whats up on sale in the supermarkets and what you can get at the fruit and vegetable market in ras al khoor for the same money. Its like night and day, plus to can haggle. I remember getting big crate of fresh tomatos for only 7 bucks. I ended up with so many I had to give 2/3rds of them away otherwise they would just sit and rot. Then on the war to the car 5 bucks for big @ss water melons.

DDS you need to get with the programme, mad cow desease was before foot and mouth in the late 90's. Foot and mouth took most of the UK's cattle in 2001

You still won’t get wholesale exports of UK Beef over here though, the Vegetarian, Lesbian, Feminist animal rights action groups have virtually closed down the export of UK livestock, that reminds me of a joke :idea:

What’s the difference between BSE and PMT? One’s mad cow’s disease and the other’s an agricultural problem.
