I will go to Dubai the first time next month for a few days.

And how long need I wait for the second time? which visa type?

There are several options.

Dubai transit visa - 4 days, not renewable
Dubai tourist visa - 30 days, renewable once, wait 30 days after exit for new visa
Dubai visit visa on arrival - 30 days, renewable repeatedly, no wait period
Dubai visit visa - 30 or 90 days, not renewable, wait 30 days before re-entry

I have a Chinese passport, so I cann't get the Dubai visit visa on arrival, I want to know how to get the visa?

Try option 1, 2, or 4.

Visas from Dubai immigration department. Sponsor (hotel, airline, company, person etc) applies on your behalf.
