Government websites aren't always accurate or up to date. That said, dubai.ae is not too bad - they might have something.

Buying from amazon is not problem. One or two DVDs will usually go straight through. More than that in one box might mean a trip to customs at the post office to collect it. If you have a UK license, you should be fine using that with a rental car until you get your residency visa, then exchange it for a full UAE license. But it doesn't hurt to get an International Driving Permit also. More here... Dubai driving licence

It was Jebel Ali International Airport. Got renamed to Dubai World Central International Airport I think in 2005. Airport code is still JXB. First phase due to open 2008 but a delay wouldn't be a surprise.

I just got the latest Explorer UAE map. The road to Qatar looks like it doesn't go through KSA. I think for KSA you need to get transit visa first. You can't travel through with unrelated member of opposite sex in your car.

I wonder if its actually possible to have a health insurance in the UAE even if you have no residence visa. It depends on the company and your status. If really are a tourist then probably not.
