Or chamber of commerce. ADCCI for Abu Dhabi, DCCI for Dubai. But you might need to call them, I've failed miserably trying to find company names on the DCCI site (ADCCI is fine).

Here's a simple Dubai visitor guide with a list of some tourist sites. Agree the big bus tour is a good way to start. I'd suggest Deira souk area, Bastakiya, heritage area near Shindagha.

DOn't know about legal restrictions but there may be contractual conflicts with your current job. "Owning" a company might be permitted but "working" for another employer is not.

Your nearest male relative. I don't think religion matters.
If you can't find a male relative then a legal guardian / power of attorney holder e.g. lawyer who is the same religion as you.

That's my interpretation, not a legal statement.
