Dubai licence exchange for Canadians yes but you need a letter from consulate.

Residence visa is permission to live in the UAE, not work. So no you're not allowed to. You might get away with it though, depending on what sort of freelance work you do and where/how you get paid.

As soon as you start looking for a job you should assume your current employer will get to hear about it, one way or another. Figure out what the probable consequences will be when they do and prepare for them. That said, Dubai is not as small as it used to be so it is possible to find another job q...

Your daughter could get a tourist visa via the airline or travel agent she uses (or hotel but I guess she's staying with you). The immigration department can review special cases - you could try visiting them and talking to someone in authority but I wouldn't be too hopeful about that.
