Hi,
Is it possible for the family to stay on in Dubai until the expiry of their residence permit, even after the husband (sponsor) resigns job and leaves the country? This is for the completion of school education of child.

Nope. If you're visa is cancelled, then their visa have to be cancelled at the same time if they are on your sponsorship.
