I have never seen maple flakes, but you can make them. If you don't have a dehydrator, I think you can do the same by putting the syrup on a cookie tray and bake at the lowest temperature so that the syrup dries out and doesn't burn (the same way you would make "sun dried" tomatoes). If you do this, it make take a couple of hours.

Good quality maple syrup (I always use Canadian maple syrup) can be purchased at Spinney's. You can also try Choitram's and Lulu's. Geant is hit and miss. Not sure about Carrefour.
